Did she have to adjust cooking times after moving to New Mexico? .....

I've had to extend cooking times quite a bit beyond what most recipes say. It's still a lot faster than simmering on the stove, but nowhere near what's prescribed.

For a red beans recipe that we use, it says something like 30 minutes for the cooking time, but I've had to extend it to about 75 minutes. The first two or three times it happened, it messed up dinner. Now I just know that most have to be extended quite a bit.
